Recipes - Pizza
Ingredients
250-350ml luke-warm water
1 tbsp dried yeast
550g strong white flour
1 tbsp salt
1/2 tbsp ground black pepper
2 tsp clear honey
2 tsp extra virgin olive oil
your choice of toppings |

Method
1. Pour 150ml of the water into a bowl and spinkle with the yeast to dissolve. Rest for 10 minutes in a warm place.
2. Sift the flour, salt and pepper into a large bowl.
3. Stir the honey and olive oil into the yeast mixture.
4. Make a well in the centre of the flour and pour in the yeast mixture.
5. Make into a soft, slightly sticky dough, adding the water little by little until the correct consistency is obtained. The dough should be elastic and smooth.
6. Place the dough onto a lightly floured board and knead for 10 minutes.
7. Place the dough in a lightly oiled large bowl, cover with clingfilm and leave to rest in a warm place for 1-2 hours. The dough shouild double in size.
8. Punch the dough down and kneed until smooth. Divide into six and leave to rest before shaping into balls. Allow the dough to rise again.
9. Stretch each of the dough balls out into a circle depending on your taste (deep-pan or thin & crispy).
10. Place on a flat baking tray, add your toppings and slide into your adobe oven. Cook for between 2-5 minutes depending on the heat of the fire.
